Take over gnisis. Use all the cave dwellings, that telvanni guys house, and all the other houses to display different things. A whole city devoted to your collection!

And use altertion, illusion, light armor, mysticism, hand to hand, marksman, security and sneak if course. And take ever sidequest ...

I'd suggest using the Tower Birthsign to help you find stuff. Beggar's Nose - Detect Animal / Key / Enchantment for 60 secs in 200 is quite nice although the tower key is pretty useless.

Maybe take over the Morag Tong Guildhalls to use as your show areas or an Imperial Fort
