Currently watching my niece. It's a whole different ball game than when I'm just over here hanging out playing with her. Now I'm actually responsible for her and its crazy. I mean I'm comfortable watching her, but each time she starts to cry, I immediately jump to see what she needs. I need to work on making Mac n Cheese apparently. That's not a skill I really have currently. It's been about an hour of watching her and she still seems unsure where her parents are, but she's comfortable around me so its not really a big problem. But man, I definitely know I'm not ready to be a dad yet.

You'll need two pots and a casserole dish. Boil the macaroni in a large pot, then pour the cooked pasta into the casserole dish.

Simmer some milk in the small pot, and fry some chopped onion in butter in the large pot just until the onion goes clear. Scoop out the onion bits and slowly add a tablespoon of flour into the butter until it crumbles up, and then melts down into a paste called roux. Very slowly add the hot milk into the roux and simmer until you form a sort of white gravy.

Throw cheese into this thing. Lots of cheese. Pour the resulting 'cheese gravy' over the pasta and bake it in the oven for twenty minutes.

There you go: Mac N' Cheese.

That, or use that crap sold in the blue box.

Personally, I prefer to make a white cheese sauce (you know, using cheese that isn't orange cheddar), occasionally with a bit of crumbled blue cheese mixed in depending on my mood, and then topping it with an extra layer of cheddar after it's in the casserole dish. Then instead of baking it, I broil it to give it a wonderful cheesy crust on top while leaving the rest of it tender.

Yeah I used the stuff in the box. I just still suck at making that apparently.

I'm a big fan of white cheese macaroni too, though mine usually has a splash of white wine in it.

That would've gone a long way to calm scribbane's niece down, methinks.

After being gone for the last week, I have finally returned home. What an adventure I had! I was up in Halifax, Nova Scotia, and Saint John (not St. John!), New Brunswick, in Canada for a cruise. It was really neat! I saw the most photographed lighthouse in the world (and further contributed to the claim) at Peggy's Cove, watched the world's biggest tides and then walked along the ocean floor at the Bay of Fundy, saw a meteor shower at sea, and am so gosh darned relaxed that it is impossible to do anything. Which is a shame, since my apartment needs some TLC, I have a few documents to do before school, a painting to finish, and I have another weekend trip coming up...but it sure was nice to have a vacation for once! :D

My brother also no longer lives with me. After having him around for the last several months, the quiet is...sort of weird. It's really bittersweet. I'm relieved he's back home near my family and happy to get some time to myself, which I haven't had at all, but I also feel guilty for feeling like that. But, I know if he could, he would probably tell me he wants me to do some stuff for myself, so here I go!
Huzzah!

Going to have Italian tonight. Need to buy a bottle of red cabernet. If I'm not back in a few hours, I was killed by rampaging Sasquatch.

But I won't be the only one to die.

Today we noticed that my 4 year old niece's bunny rabbit, princess, is actually a boy. We have had him since January of this year, I guess it's hard to tell with bunnies. My niece isn't taking it too well, and we have decided to continue calling him princess.

Yeah... there are so many things I'm allergic to, it's not even funny. (The current list is: Citrus, Melons, Cats and Avocado.)

Because it was too hot in my room because of the weather, I slept in the living room. My cat was very happy she had some company during the night and she spent the night at my feet.
