I think Skyrim is great and I love most of their changes, but there are a few things that I felt were really done right in Morrowind and then for some reason never appeared in later games...this isn't really a "Morrowind is better" rant, it's an entirely different game, but I'm just pointing it out.
ALL of the artifacts in Skyrim have to be received as the result of a quest, is anyone else slightly miffed at this? I think a lot of the excitement from dungeon diving and treasure hunting comes from a slim but existent chance of finding something really nice. It would just be cool to see some powerful stuff lying around somewhere, perhaps in long-forgotten tombs, protected by powerful enemies of course. It just gets boring after a while finding _____ of [adjective] _____ all the time, at least they could have named them. Does anyone agree?
Does anyone else miss non-quest-specific artifacts...?

Yeah, Oblivion had this too, but such items were less common in dungeons. Another thing I liked was merchant-specific treasures. Each merchant had something really good that you would have to come back later and buy - in Skyrim all merchants of the same type (like general store owners) have the same randomised stock.

I wish I could get an item of legend from a random encounter along the roads.
If they weren't nords, but instead dunmer or redguards, nobody would call them "racist".
