You could try "beating" the game with a weird mix of skills. Restrictions can make for interesting game play. I'm not sure exactly what restrictions these should be since I have mostly just explored the magic skills but I'm sure people can think of funny combos to try out.
Or see if you can kill certain powerful NPCs using very limited gear/no potions/no companions.
Or put the game down for a little while until you think of something that feels fun to try. Sometimes our fancy just isn't in a particular game at the moment, I certainly have a tendency to jump back and forth between games.

While I can't say I (or many other people) relate to your situation, you'd probably have the most fun doing little things, like finishing every guild questline, obviously the MQ (sorry, didn't read your whole post if you have already), all the Daedric Shrine quests, maybe try to make the ultimate house in you favorite city, or collect one type of every piece of equipment (e.g. Iron Sword, Steel Sword, etc.). Like people have said before me, you can never beat an ES game.
And why not make a new character? Don't force yourself into just playing one character, as there are many races, playstyles, and roleplays for you to explore and see if you like. Happy adventuring

I wasn't trying to be mean or anything like that, why all the patronizing?
I merely reacted to the nature of the post. It sounded kind of...eh...
All he did the entire post was complain about a game he just logged 80 hours on. Really? I can't subtly bash that, even a little bit? If that's the way he plays, maybe he's done with it? He seems to have done most things you could do, so maybe he beat it on his own terms. Don't be mean Nazis!

Does no one see the stupidity of this thread?
All the OP did was complain about the game.
This is the original post:
"LOOK I DID EVERYTHING!!! this sucks, this sucks, this sucks, this sucks, I'll help you with any achievements if you don't have the basic ability to read."
He complained about a feature that is exactly the same in oblivion as it is in skyrim yet acts as if that feature was never in oblivion.
If he has done absolutely everything, he can figure it out himself. Oblivion is no larger of a game than skyrim yet he acts as if skyrim is a crumb of content compared to oblivion.
As Nightingale said, this is a "praise me please" thread.

Buy it for PC and wait for the modding utilities to come out and the replay value is infinite.
