What enemy do you hate and despise most? it could be too tough or just annoying as long as you want them dead more than any other.
For me it is wolves and skeevers because every time I try to enjoy horse back one of them shows up and bites my horse, it is maddening having to jump off and kill them, especially if you do not favor melee.
Stupid creatures!
As for my most preferred prey I think the Draugr (sp?) are the most enjoyable fight, so many ways to kill them and the overlords are a mean fight if you are caught off guard running into one. Anyone else find that the enemies no longer taking 700 arrows to the head to kill is a really nice way to freshen up combat? I actually go looking for bandits to satisfy my need to see quick finishers!
The last few times I encountered wolves on a horse, I just kept riding and outpaced them.
I too love fighting Draugr. They look cool, burn nicely, and present a nice range of challenge from 'tricky' to 'cheap kills'. Its not as satisfying as killing the Thalmor or Silver Hand, but more enjoyable. I think it might be neccesary to pay a trip to the Thalmor Embassy with Wuurthad and see if it really is particularly deadly to Elves.
Spriggans are fun too.
My least favourite are Saber Toothed Cats. Saber Toothed Bloody Tanks more like. My character feels more confident taking on Draugr Wights than Saber Toothed Cats.
Despised? The Silver Hand. Genocidal [&@%!], who lock up and torture people afflicted by lycanthropy. They are horrible people, and I feel good burning them alive.
And for the same reason, I hate them even more... upon dungeon diving one day, I came across a caged werewolf. I wanted to free him. He had no place here. So I did... and he attacked me. I had to kill him. The people I was trying to save.
My most personally despised enemy would definitely be the Draugr. They aren't phenomenally difficult to defeat, obviously- I find them to be a horrendously boring enemy, however, that is much overused. I rarely find myself battling skeletons, goblins, or any of the other creatures that are expected to appear in any fantasy world; that's not to say that I would prefer that the same cliched enemies be reused in every Elder Scrolls game, but the Draugr seem to have replaced virtually all other opponents in certain dungeons. I simply can't understand why such a drab and uninteresting enemy is featured so prominently in Skyrim's generally exciting dungeons.
I most enjoy doing battle with intelligent human or humanoid enemies such as bandits, necromancers, etc. I prefer that my opponents have a bit of personality- it lends a sense of emotion to any situation, whether it entails a silent kill from the shadows or an up-close and personal hand-to-hand battle.
Trolls and Falmer, i especialy hate the falmer because the higher level ones can be a real pain to fight. The first time i encountered a troll was at about level 20 and i couldn't get his health down fast enough because he kept healing, i try to sneak attack them now as much as possible.
Most despised: uncultured Slumcloak rebels. Whom are made even more despicable by the relative ease with which they are dispatched.
Most respected: Thalmor. Civilized, organized, powerful, secretive, and brutally effective. They don't always try to take over the world, but when they do, they almost succeed.

This.
I just don't get the draugr hate, I love them. I especially like it when they mix up regular draugr and restless draugr in mobs. Adds a bit of strategy since I can blow away normal draugr with one spell but I have to conjure to help with crowd control
Lich. By the gods and the seas, as much as I love the lore behind them and how they look, I am terrified of fighting them! All that damn magical pew-pew they have.
My favorite enemy would have to bandits. Wide range of races, fight styles, and difficulty. Sometimes they even get animal buddies like skeevers and saber cats!
Frost dragons
Now that's an epic challenge, I usually die and have to reload 2-3 times to kill one (which is just the perfect amount if you ask me)
Not bad for a level 28? (I play on expert btw)

I think my most despised to fight would be Necromancers and Conjurors. They drain my magicka like it's nothing and put up wards to prevent me from just stagger locking them with dual fireball, and preventing me from freezing them with a shout so I can get a breather. At this point the only way I can ever defeat them is summoning something or another to smack them while I catch my breath, and if they resurrect their buddies even that's near impossible.
I didn't hate much enemies until a couple of days ago when I met a Forsworn Briarheart ice mage.
[&@%!] one-shot me with Ice Storm, and I have 30% Magic Resist from the Alteration perk tree.
Mages in general are annoying to fight as a mage, because you can't abuse the stagger thing from dualcasting because of their Ward spells.
Which they seem to have infinite mana for. -.-

I've also been one hit with Ice Storm, it's definitely annoying especially when you clear a room and he comes running through a whole cave to get you.
I've found the best way to kill mages who abuse ward spells is conjuration. I usually conjure up something (it doesn't have to be an atronach, although that's generally what I use) off to the side so he turns to face it, giving me an opening to side bust him or attack from behind.
If you aren't big on conjuration frenzy spells can work too. While he turns to fight off his former ally you can sneak in and attack him.
I hate the Thalmor so much. They are allowed to kill and do stuff the people of Skyrim cannot. They also started a war, and hunt down the blades. On top of that they banned the worship of Talos! Whenever i see them, i do not hesitate to decapitate them. My favorite enemy to fight are bandits. I agree with Leyyuce, the Draugr are boring and seem to be in every dungeon.
Most Despised? Any dragon that won't land. My character is sort of a spellsword, but heavy on the sword. I swear, I died at least 5 times trying to fight a frost dragon today that wouldn't land, and when it did it was on a pile of rocks so I couldn't reach him.
Favorite? I love fighting bears and using unrelenting force. Its just...comical

Yeah, I use Conjuration a lot, but for some reason my Storm Atronach likes to move behind me, so I draw aggro.
It's generally Borgakh, my follower, who ends up getting them to drop their Ward, but a lot of the time she just keeps her bow out.
And Dragons can be annoying. I had a fight yesterday with 2 Elder Dragons in Winterhold, tried getting them to land with Dragonrend and they kept flying away from the town, to land on the towers of the College. :\
Hmmm, for me, my most hated is a toss-up between bears, or necromancers. Bears, because I don't pay attention when I'm sneaking through the woods, and I always end up walking right into one. WHich is bad, because I had a snow bear chase me once that would take a third of my health in one hit, and was NOT discouraged by sprinting. Of course, I hate necromancers too. The lower level ones are fine, I can one-shot them with an arrow and sneak, but the bigger ones have eeeeeeeviil spells, and then they ressurect the ones that I one-shoted, and at that point I don't have a sneak bonus anymore. Sometimes it makes me hate that my main weapon is a bow.
Favorite? Those
Spoiler:
evil mage draugr that are carrying the shards of that one pendant...I don't remember what it's called. I love how the second one I encountered split into three when I shot him, each with a different element. It felt like a superb boss battle to me, kind of zelda-ish. I had so much fun. Oh, and then dragons. They scare the bejeezus out of me, but I love them.
