Go ahead and post any of what you think is an easter egg right here!
Apart from M'aiq. Everyone knows him.
I'm gonna start and spoiler, just to be safe!
Spoiler:
In Blackreach, you find Sinderions Field Lab and Sinderions body. This is the same Sinderion from Oblivion [the one from the nirnroot missions] and he seems to have created a new 'crimson' nirnroot.

Not sure if this happens to everyone at one point, but just north of Bleak Flats Narrow there's a horse sitting there in the road. It's not considered stealing. Could someone please see if this is random or not?

The guide says there are horses that can be "borrowed" and they act like a stolen horse but you do not recieve a bounty for mounting them.
Pelagia farm, reminds me of Pelagiad, in morrowind.
Me: "So, how did you get this rich?"
Random Jarl: "I'm the Jarl and so were my father, grandfather, and his father. How about you?"
Me: "I've just spent some days chopping wood."
There's a little cave not too far from Whiterun called "Redoran's Retreat," which of course is a tribute to the greatest of the Great Houses in Morrowind. Cough, cough.
Not really an Easter Egg in the traditional sense, but there is also a Dunmer in the game called Arven the Swift. Come on. Am I inspirational or what?
Huzzah!
"[...] for the lives of gods are not what mortals think and matters that weigh only years to mortals weigh on gods forever." The Tribunal Temple, Nerevar at Red Mountain

It's only a small thing but it made me smile. I found a skill book (I think for pickpocketing but not 100% sure) in which the author claims to be the greatest thief in the world. He says that he stole a crown in Morrowind and an Elder Scroll in Tamriel
oh another one! while i was traveling to the azura shrine, and ice atronach attacked me, and of course i started tu run, and met mai'q the liar, and then the atronach attacked me, and i heard when mai'q the liar sayd "NEREVAR, GUIDE ME!!" and then he just watched at me, and dont helped me to cill atronach.

Likewise by Windhelm there is a farm called 'Hlaalu farm' going up towards the Dunmeth pass and the Refugee's rest, which is covered in what looks to be Dunmer flags, but I am only speculating.
Spoiler:
There is also a mythic dawn museum in Dawnstar.

I found this book to a while ago, but I am sure it should be named Telvanni as second name, as every mention in the book is written telvanni, maybe some oversight.
The journal you guys have found is needed in one of the quests to find one's true past. The Dark Elf is located in Riften. I won't say anything more. (I know cuz I did it).
Occasionally the guards will tell player about the sweetrolls...
In the caves underneath honningbrew meadery you will encounter a hostile NPC named "Hamlyn". After you kill him you can pick up his journal. Reading it reveals that he is an outcast "alchemy prodigy" who feels disenfranchised by his colleagues. He's retreated into the caves to build an army of skeevers, which as we all know are basically rats. This has to be a reference to the classic tale "the pied piper of Hamelin". It made me lol when I read his journal.
you get attacked by a troll namedt uderfykte, same name as the invisible troll in oblivion
i thought it was pretty cool
Spoiler:
No, you get attacked by an Uderfrykte, just like in Bloodmoon.
Also, during the Dark Brotherhood questline, if you read all of Cicero's journals you'll come across this gem:

27th of Rain's Hand, 4E 187
Completed the Arena contract. I ultimately decided to pose as a starstruck fan, and immediately got into the Grand Champion's good graces. While escorting the arrogant fool through the great Forest, I slashed his throat and left the corpse for the bears.
