Mods
I've used OOO, but not KotN. Personally, I suggest OOO. It offers a lot more than the Knights of the Nine plug-in. Most things stop being leveled, many many new textures/meshes for weapons/armor/clutter. Being a thief is finally a good way to earn tons of money, and it adds a lot of "unmarked" quests (such as finding a gemstone and killing the boss, and as a reward you get to summon cougars, deer, wolves, snow leopards, and jaguars). The weapons/armor it adds greatly outnumber the ones added by KotN. My personal favorite is the obsidian scythe (I get to roleplay the grim reaper). Different weapon types are also added:
scythe
greatmace
shortbow
ayleid weapons (they look awesome, and have powerful enchantments)
As jeff said, you have to choose between the two. You could try each one at a time and see which you like best. I would go with OOO though.

Unfortunately, this is one of those types of problems that you can not talk someone through. I'd have to actually see the downloaded mods, and the content they come with.
1.) I would recommend deleting everything.
2.) Then chose those that are only necessary.
3.) Load one mod at a time, and then play, and see what it does. If there is no problem, then add another one.
Unfortunately, you have chosen alot of mods, that change game mechanics. I stay away from those. I only go for extra content.
When you go to a mod download page, there should be a list of comments. Read those, carfully. If you see alot of complaints, then don't get the mod, no matter how cool it looks. I've skipped quite a few mods because of this.
Never, ever, ever, get a Beta, or one that says it's not complete.
Making a mod is easy, making sure that it doesn't mess things up is the hard part. Not every modder checks.
Also, some mods have more than one dowload, several parts, as they may be really large. If you are getting
then you may have missed one of the downloads/parts, that has the textures/messhes for some items.
