I've been trying to learn Inkscape lately, but I don't know how to paint in strokes that actually look like painting. It's starting to bother me.

Yeah, me neither. Fluttershy is probably my favorite pony right now, though. But they're all awesome, of course.

Just draw a line (I usually use the "Draw Bezier curves and straight lines (Shift+F6)" tool), then use the "Edit paths by nodes (F2)" tool. Right below the Help button, there should be a button labeled "Convert selected object's stroke to paths (Ctrl+Alt+C)". Dunno if that's what you're after, but it helped me a lot.
