Re: Race questions..... Who is the best at what they do??
There really aren't any clear "best" for the basic archetypes, for example...
Best Mage?
Best Thief?
Best Warrior?
Culturally, all the aforementioned aren't considered "better" than others outside of self-bias. Sure some classes spring to mind due to stereotypes, but it's more of a vague idea of their people's history (Warrior cultures, Survival by subterfuge/wits, High-civilization touting greater learning)
Best Mage?
- Offensively - Altmer: more magicka and a bonus to Destruction, but weaknesses to the elements
- Defensively - Bretons: 'safe' racials for casters with lesser magicka bonuses, but no weaknesses
Best Thief?
- Marksman - Bosmer: highest base Agility and bonuses like Alchemy/Marksman/Sneak that benefit Archery
- Hybrid - Argonian: skills that benefit a wide array of skill-sets to fill that "Jack of all trades, Master of none" class-type
- Pure Thief - Khajiit: while they don't have the highest bonuses related to stealth, they do have both sneak and security as them. Along with a racial that benefits those that need to see in the dark, they get my vote
Best Warrior?
- This gets a little harder as each has their own unique set of offensive/defensive racials
- Defensive - Orcs: their bonuses are heavily focused around armor/armorer and resist magicka is great for shrugging off spells, but Berserk is a good bit of double-edged offense.
- All-around - Nord: skills that encompass both offense and defense along with both for racials (Woad, Nordic frost and Nordic frost resistance)
- Pure Warrior - Redguard: an emphasis on weapons, but still have armor. Strong racials with no pitfalls to speak of, they may not have magicka type resistances, but they have high resistances to the more down-to-earth/every-day effects that are extremely prevalent in a warrior's life and Adrenaline is potent.

Re: Race questions..... Who is the best at what they do??
There really is no order, but I'll try to break it down.
Mage:
Altmer - the more offensive of the two, but limited by some fairly debilitating weaknesses
Breton - the more defensive mage, good resistance and defensive power. No bonus to destruction so not as good an offensive mage as the Altmer, at least to start off
Stealth:
Thief - Khajiit - The Khajiit are slightly more stealth oriented, but both races are pretty much on even footing when it comes to theivery
Assassin - Bosmer -The better assassin due to the skill in Marksman and the addition of alchemy
(Dunmer are also a natural assassin build, but they fall into the mixed category rather than stealth).
Warrior:
There are two real warrior races, Orc and Redguard. Again there is a defensive and offensive one.
Orc - the defensive race. Great Endurance and armour skill. The resistance to magicka makes them even more defensive and they can take a lot of damage.
Redgurad - the more offensive of the two, Redguards are faster and are built to deal damage faster, but have a lesser defence. The adrenaline rush power adds to the offensive side.
Jack-of-all-trades:
These races (Imperial and Argonian) are fairly average at everything, but have a slight inclination towards the stealth arts.
Best Races - in order (In my opinion):
1. Dunmer - The perfect combat/magic/stealth mix although they seem to favour magic to some. The draw of the Dunmer is the mixed integration of combat (blade), magic (destruction) and stealth (marksman). The only real weakness of the Dunmer is a deficiency in defence.
2. Nord - A mainly warrior build, with a side of magic. They make decent fighters both offensively and defensively, but can add magic to their combat style to some extent. e.g. Restoration bonus makes restoration easier to add to a Nords skillset.

Yeah I agree that Orcs make the best warriors, to be honest. The berserk power is unmatched. Constant hits in combat at level 1? Yes please.
Re: Race questions..... Who is the best at what they do??
It really sucks being a low level assassin
The entire point of them is quick clean kills, unfortunately my enemies are still alive when I cut their heads off or stick an arrow clean through their heart... Yay for the sneak overhaul, i can run off and hide.. but it's still pretty hard when the enemy can run faster than you
