I'd like to have a pet dragon I could fly around with as well as use as a weapon, like in Drakan. That made that game unique.

With my avatar's strength I can kill e.g. a wolf in one blow and see it flying through the air. Muwahahaha

I'd like to have more than one summoned creature at a time. I've always been a fan of conjuration, and loved the glove I got from the Telvanni in Morrowind that summoned the three atronochs.
