I have it somewhat in the middle. It's hard when you first start playing (obviously) but as soon as you've gotten better in some of your most used abilities it starts to get easier. (Plus: sneaking up on people -raise your sneak skill as soon as possible if you still haven't- really makes killing really easy and actually fun to do)

I play all over the board. Sometimes I sneak, sometimes I just run around haphazardly swinging like a fool, and other times I play like a mage.

I just throw variety into it.

Mine's been in the default middle setting the whole time and I haven't found that too bad. I do get cranky at the levelled enemies sometimes though, because you'd think that as you trained a skill, it would make life a little easier, but this minor irritation hasn't been enough for me to move the slider at all.

It [&@%!] me off that the enemies level with you whats the point of leveling if you can't get better then the enemy.

I keep my slider about an inch to the right of the middle. It's more difficult so that it provides a challenge, but not insurmountable.

With normal, I find that once the critters level it's difficult, but then a level afterwards, once you've found some levelled loot, they're too easy.

The items stop levelling after a while. So you and the enemies keep levelling, which means you're getting more HP and magicka and such, but the weapon/armor that you may find is at the same level as it was when you were level 25. Same with stats, I hit 100 in strength and endurance, blade, armorer, etc, at about level 15, which means I was fairly strong. In comparison, now, the enemies level with me so they're getting HARDER to defeat.

Hence, I hate levelled enemies. There's no point in striving for any more levels because I'll never be "better" as a character than they are. It takes some of the enjoyment out of wanting to train a skill really.

I enjoy the constant life-or-death struggle the leveled enemies present.

furthest right (hardest).

101% reflect damage, 100% magic resistance (breton), 85% shield, spell stacking 1600 frost damage per 3 spells.

can't be disarmed or mana drained. no worries about weapon/armor health, fatigue, repair hammer count.

I keep my slider for difficulty at default. The items I created provide me with what I need to stay alive. I could move it more to the right, but right now I want to keep it where it is.
