Graphic herbalism or other mod that auto-harvests plants with one click rather then having to open them as chests.
You're too late. I gave the job to some spellsword.

Re: Mod Recommendations for my first ever playthrough?
My personal recommendations as someone who generally hates the feeling of vanilla Morrowind...
- Graphic Herbalism for sure
- Delayed Dark Brotherhood (if you have Tribunal)
- Bloodmoon Latest Rumors Fix (if you have Bloodmoon)
- MGE XE and Morrowind Code Patch
- Signposts Retextured
- State-based HP
- Fair Magicka Regen
And a mod I consider to be absolutely essential to my enjoyment of the game is Speed and Stamina or something to that effect. Walking around in MW can be agonizingly slow if you're used to the pace of Oblivion.
You might consider a mod that makes all of your attacks hit if you actually hit the enemy visually, but some folks consider that cheating.

Morrowind Code Patch
Morrowind Patch Project
Better Fonts
Graphic Herbalism
MGE XE
Delayed DB Attack
Better Dialog Fonts
All good mods I use.
I'd add:
Morrowind Comes Alive
Morrowind Official Plugins
If you want to try upgrading Morrowind's textures, use the Replacers function within Wrye Mash.
