How Many Souls Can You Fit Into One Body?
For starters, at least two. So what's the upper limit? Can I just keep packing and packing? And is there any reason to do so? Does it make them/it more powerful?

Whether or not it's a good idea depends on how you deal with "bandwidth" as it were. You can have all the knowledge to reshape the world. Trouble is, you only have the two hands.
More souls = More power, in anyone's typical and ill-defined storytelling mechanic. Then you get into the issue of whether or not conflict between them will interfere with that power.

Well on my 700 hour playthru on sky rim I got almost 100 dragon souls absorbed into me. So probably a lot

Well, dragon souls are kinda different. It might be similar to the Soul Gem to Soul Cairn system where "used" souls are sent elsewhere.

Which begs the question - what about the Charges of the Three souls? Talos is the Warrior, the Thief and the Mage rolled into one, but each of these has three lesser Charges. How deep does the rabbit hole go?
Monsters are bred in labyrinths, labyrinths are bred from walls. There is a reason the Giants choose to remain nomadic rather than follow their shield kin the Nords in building permanent settlements. The Tower is the beginning of all walls.

The body is like a machine. Only one soul or battery is enough to drive it but however every body has different slots. More souls will do nothing but give the body more energy, if you need more power or strength, download more softwares.
