Children of Eadwyre and Barenziah?
OK, I know that Eadwyre and Carolyna had Elysana, and Barenziah and Symmachus had Helseth and Morgiah. However, despite being husband and wife, did Barenziah not have any children by Eadwyre?

No one knows for sure but I bet they did. I think their relationship is like the katariah one.

Wasn't Eadwyre already quite old by the time they hooked up? Like, well past the age a man usually fathers children?
Monsters are bred in labyrinths, labyrinths are bred from walls. There is a reason the Giants choose to remain nomadic rather than follow their shield kin the Nords in building permanent settlements. The Tower is the beginning of all walls.

The reason that I ask is, after playing Tales of Symphonia, I was wondering about half-elves in the Elder Scrolls series (Bretons are humans with elven ancestry, not quite what I'm talking about).

Cross breeding doesn't work like that, see Notes on Racial Phylogeny, probably in the top ten for most referenced books in the series. The Bretons are a special case, brought on by generations of cross breeding allowing for some of the father's races traits to manifest as the Bretons that not many people are all that fond of today. They are a very boring race, especially for a race with so much religious, racial, sexual, and military violence in their history. I don't know how Bethesda does it.
So to answer your question, a "half elf" would just be whatever race their mother was, with some traits from the father. Should two races intermingle for multiple generations, and new race can rise up. Note the keyword there, "race", not "species". They're distinct sub-groups, but if you really want to start an argument, you could say that all of the playable races in Tamriel are essentially one giant species (with some uncertainty for Argonians and Khajiit).

Apparently, they all share an identical skeletal structure.
His name was Emer Dareloth.

In fairness, the Bretons are supposed to be the boring ones. The "generic fantasy human" role got a bit too crowded with the introduction of Imperials, I feel.

Re: Children of Eadwyre and Barenziah?
The way the lore was being conceptualized in Arena and Daggerfall, there wasn't actually an Imperial race per se. Most of the Septims were Bretons, with a few Nords thrown in. The royal family and generals were usually from mixed families. MK and Kuhlmann introduced the Colovians and Nibenese and their lore into the mix. These races, which comprise what we call Imperials, are actually more colorful and interesting than Bretons turned out to be, but High Rock still has some interesting lore and aesthetics under the surface. ESO did a good job of dealing with some of its more fun quirks, like Wyresses, references to the Bad Man, political intrigue and Reachmen.
