I have lots of weird habbits.

1. I wont pick a lock if my character does not own a shiv (closest looking thing to the lockpick blade) - I just do not buy the imperials letting you keep the lockpicking blade on you and you are never seen picking one up... where did he put it when he was changed into the rags? O.o;

2. I do not kill animals if I can avoid it - I kill wolves etc if backed into a corner but my player is a plant eater :D

3. I do not kill bandits on sight, only if attacked first or he discovers something to indicate they are murderers (like a body)

4. I only sleep on the "Imperial Beds" (green ones) - If he does not eat animals he does not wants to sleep on their skin!

5. I try and eat and sleep regularly even without a hardcore mode.

6. I try to stick to only 6 skills and never use those outside my selection, real pain on master.

2,3 and 4 are a real pain to stick too... seems that the Mare and Skeever are the only inns with those beds making 5 a pain until I get a house.

Most of my habits are character-specific, but I've recently noticed a few habits all of my characters share:

When they have to leave their horses in settlements without stables, they 'stable' the horses at farms, in the enclosed meadows together with the cows, so that the horses can't run off. I had a similar habit in Oblivion, where I always closed the gates to the meadows even though the NPCs would later open them again.

My characters also don't pick flowers inside settlements. Out in the wilderness they pick pretty much any flower they come across, but the towns have to be kept beautiful for the sake of the NPCs who live there.

Also, my characters eat on a regular basis due to a needs mod. I've made it a habit to feed them a healthy diet by making sure that each meal contains at least one fruit or vegetable in addition to dried meat or bread.

So does Arvak. Only your horse dies when you jump from a height.

At some point recently, I realized that the railings on the stone bridges in the wilderness were wide enough to balance on. Ever since then, I have a hard time stoping myself from hopping up on them and sprinting across.

I tried to fit it into character's roleplays for a while, but honestly, it's me that wants to do it, not them.

My Nord smith Fram will mine every ore vein he sees. He's spent countless game minutes running up to discolored rockfaces only to determine that he's looking at lichen. He almost died once when he arrived in Rorikstead and he ran up a hillside chasing an ore vein, ignoring a large shadow flickering over the farm. He extracted three ores and a ruby while the dragon burned away half his health.

Fram also refuses to touch anything he can identify as an Daedric artifact or gear. If a quest requires him to do so, he reconsiders whether he wants to be on the quest.

Don't know if they would be considered "weird" but I don't fast travel outside of boats and carriages. And I have casual wear that I put on in town and stuff and then armour for when I'm in combat or out adventuring.
So we have come to solve every squabble in the village personally?

Weird habits... well, in TES in general I have a compulsion to collect everything, but most especially books, armor, and weaponry (just one of each, mind you). I've managed to tone it down in Skyrim, especially since I'm struggling to keep it in character. Hm, oh, whenever I have to quit for the day, I set up camp and/or go an inn (no homes yet). Character eats, drinks, prepares for bed, etc, then sleeps before I'll quit. Gets me ready for the next day :P

So on to that. Blade's weird habits (if you'll call them that):
-Never drinks alcohol or takes skooma/ moon sugar
-Never eats sweets - she doesn't have a sweet tooth. She likes mudcrabs, venison, stews, and meat in general; that being said, with the mods I have installed, she will not eat spider, chaurus, troll, wolf, fox, or dragon. The first three disgust her, the latter three out of respect.
-When she comes across the dead (peasants along the road, murder victims, etc), she pauses to investigate, consider their unfortunate deaths, then she leaves; she does not loot them.
-Collects swords (hence her name)
-Does not make small talk, and so only gets quests when an NPC comments on a problem first; then she'll ask, but not beforehand.

Just a few things that I can think of.
If my character is playing a difficulty where he doesn't have to eat to heal in combat, he will always look for a place to sit down to eat.
All of my characters collect books, but only one of each. Even the DiD characters collect books.
I had a DiD character that would always dress appropriately for either adventuring, doing business in town, or going to bed.
I always try to get a full set of guard armors.

My characters collect books too. :D My current mage is collecting all the magic and enchanting skill books, and she occasionally reads them whenever she gets home.

Actually a lot of the habits described here aren't weird at all to me but rather examples of what I call roleplaying - playing as a character with their own habits, quirks, hobbies etc.

My latest thing is this: when I park my horse at a stable, I always make sure to leave a few septims in a nearby barrel to pay for its keeping. Also my horse always has a few apples and carrots in his inventory. (Dog followers are even more fun in this respect, at least if you have AFT, because you can drop meat in front of them and tell them to pick it up.)

At Lakeview manor my Nord makes an effort to collect as many books, journals, and notes as possible in an attempt to make the library there the greatest collection of knowledge in Skyrim/ on Nirn.

Long has the Stormcrown languished, with no worthy brow to sit upon.
By our breath we bestow it now to you in the name of Kyne, in the name of Shor, and in the name of Atmora of old.
You are Ysmir now, the Dragon of the North, hearken to it.

It's definitely a habit. Far from a weird one, though.
Baurus: Our job is to get the Emperor out of situations like this. Though I'll admit, things aren't going exactly to plan.

Casandra: At the moment, the deadliest weapon at my disposal is a goblin's head on a stick. I'd be worried if this was the plan.

My Khajiit will sleep 19 hours a day, just like a cat. I don't do it in little increments though, so that is not like a cat.

Quite often my character attempts to slaughter whole towns, but then goes back in time to just before this occurs as if nothing happened.

It was much more difficult in Fallout, you had to get very creative sometimes. Pickpocketing and explosives. And more explosives. Geez I might have to quit Skyrim and go back to Fallout for a bit

I think pretty much everyone have at least once gone rampaging and then reloaded a previous save . I remember having a massive one in Oblivion where my character slaughtered every town. The bounty was... ahem... quite large.
I have had some occurrences like this in Skyrim too. Two of the unintentional ones had lasting consequences since I was playing my crazy altmer who is forbidden to use the save > do stupid stuff > load -method. Riften is pretty quiet these days =P.

- I also discovered I too have a habit of collecting Centurion Dynamo Cores. I don't even know if they do anything. They just somehow seem important so pretty much each of my characters have at least one. Lately my DiD character managed to resist the temptation though.
- I noticed I also tend to collect at least one skull. Don't know why. Have done this on several characters who usually end up dropping the skull anyways when the inventory is full. Lately I made this a deliberate trait for one of my characters. He's actually collecting skulls. Just needs a house which to fill with them.

My Altmer conjurer, Sylmirie, takes Meeko with her on adventures. But she hides him outside of the barrows or forts she and her friends go into, usually in the bushes or up in rocks, somewhere far away from danger. She's found dead wolves and other misc animals next to him when she returns. She also drops meat or a treat for him, in case he gets hungry while she's gone. :)
