You can do that by turning on God Mode and then making your own lightning spell with all the attributes maxed.

Watching that horse fly towards the ramparts reminds me of the scene in the Holy Grail movie, Monty Python, where a cow gets catapulted from the French dude's castle.
I must admit that I use Shadowmere to carry some of my stuff. When I need it, I become pretty creative on knocking her out. Like a fortify speed spell and then run her, no not run, FLY her off a cliff. It's pretty exciting on the way down and I always manage to survive the fall while the horse does not... lol
