I am planning on doing a modded play through of this soon and I have 2 builds I am planning on using. I plan on using OOO both regular and the Shivering Isles OOO as well as Maskar's Overhaul,I mention that because those are the two main mods in my planned setup that will have the most impact on gameplay.I also planning on using mods that make Endurence and Health gains retroactive and attribute gains all plus five as long as you level a linked skill at least once.So I can focus on enjoying the game rather than efficient leveling or meta-gaming.

Here are my two planned builds

Thief\Nightblade

Race:Breton(I know this isn't the best for stealth characters but it what I am going with mostly for roleplaying reasons and because I want to)
Gender:Either though for this character I am leaning toward Male
Favored:Attributes:Agility and Luck
Birthsign:The Thief
Specialization:Stealth

Major Skills

Blade
Light Armor
Security
Alchemy
Sneak
Marksman
Illusion

Skills I won't take but use

Mercantile
Speechcraft
Mysticism
Athletics
Acrobatics

Spellsword\Magic Knight

Race:Breton
Gender:Either
Favored Attributes:Endurance and Intelligence
Birthsign:Atronach,or Lady or Warrior
Specialization:Magic

Major Skills

Blade
Heavy or Light Armor (Leaning toward Heavy)
Block
Conjuration
Alteration
Destruction
Restoration

Non Major Skills I will Still use

Alchemy
Mysticism
Athletics
Mercantile
Speechcraft
Illusion

So how do these build sound? Any Thoughts or Advice?

OOO is a wonderful mod. Having played a version of heavy armored spellsword most of the way through it a couple times, here are a few considerations regarding late game encounters, "world bosses," etc.

1) Many end game enemies are tremendously powerful spellcasters in the realms of Destruction, Conjuration, and/or Restoration. You need a way to either short circuit that casting or resist the effects of it (very high Magic Resist or Spell Absorb). Poisons (e.g. Paralyze/Silence) sometimes won't work because the enemies have high resist or immunity to them.

2) Many high level enemies have blindingly fast movement speed that makes encounters much trickier. You need a way to keep up, either by becoming Sonic yourself or by slowing them down.

3) Don't neglect status curing effects (Dispel/Cure Paralysis etc.). There's nothing like being a magic reliant character and then getting hit by a 120(!) second silence (plus five other lingering negative effects) by a world boss.

Thanks for the advice,I will keep it in mind, its seems that I pick restoration as one of my major skills plus I do tend to find its often an underappreciated skill.Plus it will serve to remind to expand my horizons when it comes to useful alchemy effects and ingredients compared to what most people usually think of.

Another neat feature of OOO is it's expansion of alchemy options. There are IIRC around a dozen new creature parts, while gems and minerals can be ground into dust for use in alchemy as well. Sapphire dust was a particular fav of mine.

I remember seeing a lot of that in Pem's Nebbish and Sorcererdave Idris Lets Plays on Youtube.I also made sure to add Illusion to my unofficial minor skills for my spellsword build.
