In Skyrim, when first visiting the DB, one of the guys is talking about a Khajiit monk who was trained in some fighting style, sounded a lot like a Shaolin monk.

Any info on monks with fighting styles in the lore? I see J'Ghasta may be related to this

From what I know there are three different hand-to-hand styles of fighting that are unique martial arts styles.
These styles are; Goutfang, Whispering Fang and Rawlith Khaj.
Though Khajiits also specialize in short blades and daggers.

Yes, Rawlith Khaj, Goutfang, and Whispering Claw are among the many Khajiti arts of claw and tail. Rawlith Khaj means "rain of sand," and the art has many styles such as Rain, Sand, Wind, Sun, Storm, and Two-Moons-Dance.

The Ancient Moths in Oblivion were pretty much like Shaolin Monks, too. Maybe they learned something from the Khajiit or developed their own style.

There are several martial arts outside of the Khajiit forms, like the Exposed Palm technique.
