How does one get rid of the following books (tagged as quest items):
Chimarvamidium
Gallus's Encoded Journal
Lymdrenn Tenvanni's Journal
and
Night Falls on Sentinel (assuming you've already given one copy to Rustleif)
Any help would be appreciated.

I imagine the only way is to finish whatever quest is associated with it. You can find a lot of the minor quests in the Miscellaneous category of your quest log. Unfortunately since there's no console on consoles (ironic) you can't just drop quest items.
If you're trying to cut weight, quest items don't count towards your encumbrance.

Urag gro-Shub in the college of Winterhold will ask you to bring him books. Maybe these are a few of them?

In Skyrim? Most quest items do weigh something now.
TC, you're out of luck for many items until a patch comes out.

Nope. This has been tested by several people. Quest items (while they are still considered quest items) become zero weight. The description will still show a weight, but the weight is not applied to what you are currently carrying.
