For fellow stealth players

What will be your fighting style when it comes to open conflict, particularly with dragons? I think when push comes to shove, I'm breaking out a two-handed weapon to deal with our fire-breathing friends. Arrows aren't going to last forever.

Arrows will be quicker so I'll stick with them, also seeing as Dragons aren't going to be within range of a claymore/battle-axe for the most part.

But aren't arrows supposed to be more rare this time around? Plus, I'd imagine it would take quite a lot to drain the dragon's entire health bar.

I'll resort to one-handed swords and magic, personally; I'm not into two-handed. But I'll use a bow whenever possible and if it's practical. Downing a dragon with a bow would feel awesome.

Magic seems like probably the best way, but my first character is going to have a strict no magic policy (except shouts).

Especially if you use a black arrow and kill a dragon named Smaug...
Personally I will use Arrow a lot in Skyrim, and when a dragon comes around I'll still probably be shooting at it with my bow. (Khajiit archer all the way!)

You're right but Dragons should also be rarer than regular foes. I also doubt that arrows will be insanely rare to the point where you'd be willing to chase a floating arrow down a river. Perhaps twice as rare as Oblivion's which is still fairly abundant.

I'll be using my arrows, got some nasty poisons planned

Also my dragon shouts will help.

If the bows aren't enough, I'll go shortsword and magic.

Depending on the enchantments and when coupled with the right poison, A bow should do enough damage.
I wonder if you can hide for sneak attack, or if the dragon AI is full agro all the time or will stop and search for the PC or others it knows to be around.

Hopefully it won't always be the case that a dragon flies out of nowhere and strikes, if you could sneak up on them and get a good critical hit when one is resting/eating then that would be interesting.

High-powered Archery, an enchanted bow with poisoned arrows and sneak attacks were possible. I will max out the stealth and archery perks, so that should help.

You can for one dragon i know, in a gameplay video when todd is fighting a dragon at the mouth of the world, right before going there or up its stairs you can see the dragon resting, and it doesnt get up till hes at the very top.

I always took that as an ambush, not he doesn't see me.

I'll be dual wielding daggers for close combat so when he lands that and dragon shouts will have to do.

Dual daggers would be pretty awesome now that I think about it.
Actually, scratch that. Dual short swords.
Enchanted short swords.

It just now occurs to me that while dagger+sneak is an excellent idea in game, doesn't the concept seem a little silly when you take a step back. In practical terms, yes, it's a good idea, but I have this image in my head while I think it. Goes something like this:
Dovahkiin: -tiptoes up to the dragon, dagger in hand.-
Dragon: -busy roasting guardsmen-
Dovahkiin: -slashes at dragon-
Dragon: -continues roasting guardsmen, because in any world other than elder scrolls, daggers don't even register to dragons. Like fighting an troll with a toothpic.-
Dovahkiin: -tries again-
Dragon: -finishes with the guardsmen and turns around to eat Daggerborn.-

My heart just crashed.
But this is very true. It will be very stupid.

Eh, don't be sad. Like I said, that's the case in any world but the Elder Scrolls one. But this is Elderscrolls, haven of badass daggers with 15x damage.

15x??? Has sneak attack damage with bows been increased as well?

Hmm, for bows, I don't believe the multiplier was for sneak. The perk there was an in general sort of thing. And I don't recall the precise amount. But yeah, daggers have a 15x sneak bonus.
