So, I want to use that command on the console to change my appearance, but not my race. I just want a different hair style

Not if you follow this procedure:

1. open console
2. type: ShowRaceMenu
3. make your changes
4. DO NOT CLOSE THE CONSOLE OR EXIT THE RACE MENU (or else your skills get reset)
5. hit ESC to bring up the game menu
6. save your game
7. immediately load the game you just saved
8. Profit!

I've used this to tweak my character's faces many times and never had any problems. As an alternative to steps 5-7, you can use the console commands to save and load (usually Save Test and Load Test will do).
