Skeleton Archers, as you all know, are a fairly common enemy from relatively early on into the game. They usually come with a pack full of magical arrows of a randon sort, that they use at you. They can be-Quite-Hard-hitting, but usually they are quite frail too, so it should be easy enough for you to snipe then out yourself... Usually...

But... There are archers and there are-Archers. It is just that. Some Skeleton Archers seem to come with a load full of paralysing arrows... And I often find myself powerless against then. All it takes is for one lucky shot and I am stunlocked, reduced to watching helplessly as my character is turned into a pin cushion before my eyes.

Any advice against skeleton archers with paralysing arrows?

Resist Paralysis might help if you cast it in advance, but see the note about casting cost:

https://en.uesp.net/wiki/Morrowind:Rest ... _Paralysis

Cure Paralyzation should help, except you can't cast it on yourself while you're paralyzed:

https://en.uesp.net/wiki/Morrowind:Rest ... ralyzation

On the other hand, you can drink a potion to cure paralysis while you're paralyzed, and eating Corkbulb Root by itself might also do it since that is its first effect:

Your best bet is probably to stock up on Potions of Cure Paralyzation. There are a number of restocking vendors, including Anis Seloth in Sadrith Mora, Anarenen and Cienne Sintieve in Ald'ruhn, Andilu Drothan and Rolasa Oren in Vivec's Foreign Quarter, Fanildil in Ebonheart, Ajira and Sharn gra-Muzgob in Balmora, Ygfa in Pelagiad, and Bervaso Thenim in Molag Mar, among others. You could also use alchemy to brew your own; the ingredients are relatively easy to come by, with Corkbulb Root and Willow Anther probably being your best bets as they are easily found in abundance in the Ascadian Isles and are restocked by a number of different vendors each; they also make the lightest possible potions (since potion weight is the average of the weight of the ingredients used). Since Cure Paralyzation has neither a strength nor a duration, the quality of the alchemy apparatus used to create the potions doesn't matter.

Your other option is to increase your Willpower, since Willpower directly affects your ability to resist Paralysis (100 Willpower will make you immune to Paralysis).

Note that this information is based on vanilla Morrowind; since you're running modded, YMMV.

I might be wrong about that, but I think your resistance to paralysis is directly proportional to your Willpower. I'd have to test it to be sure, though.
