Does a sorcerer have a 100% chance of absorbing spells? I'm sure mine isn't absorbing them sometimes so I was wondering if it would be worth using items with additional spell absorption...

IIRC spell absorption is dependent on Intelligence and Willpower:

  • Spell Absorption - Allows the player to sometimes absorb spells. ((INT+WIL)/2) [source]

I think this is no different for the default Sorcerer than it is for a custom class. You can also check the electronic manual that is supplied with the demo version, there should be descriptions for every class.

You also must have sufficient 'empty' or used magicka to be able to take in all the magicka points of the spell cast at you - so if you have full magicka, you can't absorb at all.

Yes. Chance is always 100%, as long as you have enough empty magicka.
