what level do you need to be before the dawnguard starts to recruit?
I'm level 2 and I havent seen the recruiter.

Durak will find you at level 10 however there is no level requirement to start the quests if you just go to the fort.

It's better if you're level 10 or higher depending on your skill level, equipment, perks taken, difficulty level etc. It's a good idea to wait until then.

you can start immediately, but you'll likely have a pain of a time clearing through all the caves/tombs/dungeons and all if you don't level up.

I started at 10 and it was just a little bit rough at the beginning because of the life drain spell the vamps use. Not that bad though, certainly doable.

I like the crown with atronach and ritual stone Absorb magic to kill everything, then reanimate it all :P

No matter what my level is, vampires are my hardest enemies. Dragons dont even give me a problem. Of course, I have yet to fight wild werewolves. Everything in the game has a pattern to engagement that makes survival easy, I cant figure vampires out. If you keep distance, they have magic, If you are up close they have OP melee. If you are in the middle, they have summons and drain life. Run in sword swinging, your dead, stay back and snipe and you are probably dead, sit in ideal spell range and you are dead. The only way I successfully combat vamps at low and medium levels is by having summons and companions, a good ward spell and a bunch of fireball scrolls. When I get both breakers I am a vamp's worst nightmare. Spell breaker for the drain life, Dawn breaker for the win.

Honestly the best way I've fond to combat vamps early on was with the crossbow and sitting in a dark corner, taking pot shots from across the room (every "hard" vampire sits in a huge open room)
