So in Oblivion my favorite faction was the thieves guild, so I really liked the Gray Fox character. I never saw it explained anywhere in Skyrim what happened to him, or why he's no longer around, since whoever wears the cowl of Nocturnal "is" the Gray Fox. Is the Fox only the leader of the Cyrodiil Thieves Guild or did that tradition end sometime between Oblivion and Skyrim... What does everyone think?

Well there is one quest that explains what happened to the player`s Gray Fox from Oblivion:
Spoiler:
Sheogorath really is the player character and thus also the old Gray Fox. He specifically says that he was there with Martin when he turned into the avatar of Akotosh and fought of Dagon.

But the Champion of Cyrodiil isn't necessarily the Gray Fox. Though if he is, then I would think Nocturnal would have gotten the Gray Cowl back- or, before he became Sheogorath, might've passed the Cowl on to someone else.

Ya but since it's never explicitly stated that
Spoiler:
The CoC is actually Sheogorath
then I'm not so sure. IF he is, then I do think that in some way or another the Gray Fox thing ended, but if he's not, then the question still remains :o

I think the Grey Fox only lead the Cyrodiil branch of the thieves guild.

There's nothing in Skyrim implying that the Gray Fox vanished or is still "working". We only see a Bust of the Gray Fox and hear about Mercer Fray's "obssession" with the famous thief from Delvin.

I suspect that after breaking the curse from Corvus Umbranox, the new Gray Fox went into hiding and Nocturnal got back the Gray Cowl. A new Gray Fox will rise.

Spoiler:
Nocturnal is wearing her cowl when you meet her, although on her head it looks like a normal hood. I imagine the player character from TES IV eventually returned it to her the same way the Nerevarine returned many of the artifacts he/she received, like Keening or the Helm of Oreyn Bearclaw.

Each province seems to have its own Thieves Guild independent of the others, although they mostly follow the same beliefs and guild rules.
