After doing "The Taste of Death" and aquiring Namira's ring, are you stuck being a cannibal or the option only appear when you are wearing the ring?

Only when wearing the ring.

Also, is Eola any good as a follower?

And cannibalism is bad because— why?

cannibalism is the most respectful way to deal with the deceased, in my opinion. in a certain society, it would be environmentally safe and show that we accept the cycles of life and death.

I like Eola as a follower, Bane. However, I think she's dead in my game. I don't know, I couldn't find the body to confirm it. But she's a nifty follower.

On topic: She is indeed a nifty follower. Watched her take out a bandit lair on her own, once! Though after the chief she was in dire need of healing hands.

It is sort of surprising how eager people are to share their opinions on cannibalism when given the invitation to do so. I mean I suppose there's nothing wrong with it, we all like to get stuff off our chests.

I thought that but I have the cannibalism option and I'm not wearing it. I did try to wear it but Hircine's Ring is blocking my ability to wear any other ring. Have to finish that quest sometime.

Cannibalism is indeed a respectful way to deal with to deal with the deceased. That way, you accept life and death, and your loved ones are apart of you until you [&@%!] them out.
